Vegan Mushroom Spinach Pie

An easy to make vegan pie that has a saucy mushroom and spinach filling. Makes the perfect comforting meal!

Ingredients
∙ Serves 4
Produce
2 leaves sprigs 1 tsp chopped fresh rosemary, fresh
100 g Baby spinach
4 Garlic cloves, minced (1 heaped tbsp)
600 g Mushrooms
1 Onion, diced (roughly 3/4 cup)
1 tbsp Sage, fresh leaves
Canned Goods
1/3 cup Beef stock, vegan
Condiments
1 tbsp Balsamic vinegar
1 tbsp Soy sauce
Baking & Spices
2 tbsp Cornflour
1/4 tsp Salt
Oils & Vinegars
1/2 tsp Coconut oil, unrefined
1 tsp Olive oil, extra virgin

2 sheets Puff pastry, vegan
